Original recipe card for Omelet Souffle

Ingredients

  • Six Eggs
  • 1 teaspoon Flour
  • 3 tablespoons Powdered Sugar
  • To flavor Extract of Lemon

Instructions

  1. Break the eggs into separate cups; beat 4 of the yolks, mix with them the flour and sugar and a very little salt; flavor with the extract of lemon.
  2. Whisk the whites of the 6 eggs to a firm froth, mix them lightly with the yolks; pour the mixture into a greased pan or dish and bake in a quick oven.
  3. When it is well risen and lightly browned on top, roll out into a dish and sift pulverized sugar over the top and serve.
