Original recipe card for Lyonnaise Potatoes

Ingredients

  • 1 pint Boiled Potatoes
  • 1 tablespoon Butter
  • 1 tablespoon Chopped Onion
  • 1 tablespoon Chopped Parsley

Instructions

  1. Heat the butter in the frying pan.
  2. Add the chopped onion.
  3. When pale brown, add the diced boiled potatoes, seasoned.
  4. Shake till butter is absorbed.
  5. Potatoes should not color.
  6. Add the parsley and take up.
