Original recipe card for Brussels Sprouts

Ingredients

  • 2 Qts. Small, Firm Sprouts
  • 1 Tablespoonful Butter
  • 1 Tablespoonful Chopped Parsley
  • 1 Juice of Half a Lemon
  • To Taste Salt and Pepper

Instructions

  1. Pick over the sprouts and remove all poor leaves; then wash.
  2. Boil in salted water until tender; drain and cool.
  3. When about to serve, melt the butter in a frying pan, adding pepper and salt to taste.
  4. Add the sprouts, put over a brisk fire and toss about until very hot.
  5. Add the chopped parsley and lemon juice; then serve.
  6. If preferred, the sprouts may be boiled in salted water and served with Hollandaise or a plain cream sauce.
