Original recipe card for English Penny Muffins

Ingredients

  • 1 cake Yeast
  • 2 cupfuls Warm Water
  • 2 cups Melted Lard
  • 1/3 cup Sugar
  • Two Eggs
  • 1 teaspoonful Salt
  • To mix Flour

Instructions

  1. Soak one cake compressed yeast in a little warm water.
  2. Mix warm water, lard, sugar, eggs, salt; add yeast and flour sufficient for stiff dough.
  3. Let it rise.
  4. When light, pinch off and put in muffin pans to rise again.
  5. Then after they are light, the second time, place in a cold oven, turn on gas, and bake in moderate oven for 25 minutes.

Notes

These muffins may be made up and kept for a week, the dough pinched off and baked at any time, as they are delicious for any meal.
