Original recipe card for Fried Potatoes

Ingredients

  • Five Potatoes
  • To sprinkle Salt

Instructions

  1. Pare raw potatoes; cut as thin as wafers with a sharp knife.
  2. Soak 20 minutes in cold water; dry on towel.
  3. Throw a handful at a time in a kettle of smoking hot fat; skim out as fast as they are browned and drain on unglazed paper.
  4. Sprinkle with salt.
