Original recipe card for Boiled Rice

Ingredients

  • 1 cup Rice
  • 4 quarts Boiling Water
  • 1 tablespoon Salt

Instructions

  1. Wash the rice through several waters, till the water runs off clear.
  2. Have the boiling water boiling rapidly in a kettle, add the rice and salt.
  3. Boil at a gallop till rice is tender—this takes from 12 to 20 minutes.
  4. Drain, set colander over boiling water for 10 minutes or more, to steam.
  5. Each grain will be distinct, yet tender.
