Original recipe card for Pittsburg Potatoes

Ingredients

  • as needed Potatoes
  • as needed Salt water
  • 2 tablespoons Flour
  • 2 cups Cream or milk
  • 1 tablespoon Butter
  • as needed Cheese
  • small lot Pimentos

Instructions

  1. Cut potatoes in small squares and cook until tender but not mushy in a good salt water.
  2. Drain water off thoroughly.
  3. Make a cream sauce of two tablespoons of flour and two cups of cream or milk and tablespoon of butter.
  4. Cut cheese in small bits and melt with sauce, pour this over the steaming hot potatoes.
  5. Lastly add a small lot of pimentos cut in fine pieces.
  6. Serve hot.
