Original recipe card for Fried Potatoes

Ingredients

  • 1 quart Cold boiled white potatoes
  • 4 tablespoons Butter
  • 1.5 tablespoons Finely chopped raw onion

Instructions

  1. Slice cold boiled white potatoes.
  2. Into your frying pan put two tablespoons of butter and 1.5 tablespoons finely chopped raw onion.
  3. Fry till the onion is a light brown.
  4. Then add 1 quart of the sliced potatoes and two additional tablespoons butter.
  5. Cook till the potatoes have absorbed the butter, then pack down with spatula and let cake and brown a little on bottom.
  6. Turn and allow other side to brown.
