Original Recipe Card
Ingredients
- 2 teaspoons (rounded) Corn Meal
- 1/2 teaspoon (level) Salt
- 1/2 teaspoon (level) Sugar
- 1/2 cupful Boiled Milk (Sweet)
- To mix Flour
- 1 teaspoonful Sugar
- 1 teaspoonful Salt
- 1/3 teaspoonful Soda
Instructions
- Start about 5 o'clock in the evening, scald cornmeal, and other ingredients and work into a mush.
- Set in warm place until next morning.
- Then add other ingredients.
- Put soda into a pint of boiling water; add cold water until liquid mixture is lukewarm and make into thick batter with flour.
- Now add the mush made overnight and stir briskly for a minute or two.
- Turn all into close vessel and set in a kettle of warm water.
- Take care to keep the 'sponge' of uniform temperature.
- Water in kettle should be as hot as the hand can bear.
- Put a plate in the kettle under vessel holding 'sponge' lest it get too hot.
- When light and foamy make into a dough with flour, adding a tablespoonful of lard, mold into loaves.
- Put into pan bread.
- Scald vessels in soda and water, before using.
