Original recipe card for Salmon Salad

Ingredients

  • 1 Can of Salmon
  • 4 Sour Pickles, Finely Chopped
  • 3 Hard-Boiled Eggs
  • 1 Level Teaspoonful Mustard
  • 1 Tablespoonful Sugar
  • 1 Tablespoonful Butter
  • 2 Tablespoonfuls Cream or Milk
  • 6 Tablespoonfuls Vinegar
  • 1 Raw Egg

Instructions

  1. Remove all the skin and bones from the salmon and flake it fine, then add the chopped pickles and boiled eggs and mix all thoroughly.
  2. Stir the mustard and the sugar together, then add the butter, the cream or milk, the raw egg and the vinegar.
  3. Cook until quite smooth, stirring all the time.
  4. Just before serving pour over the salmon.
  5. Serve cold on crisp lettuce leaves.
