Original recipe card for Lobster Salad

Ingredients

  • Three-quarters Lobster
  • One-quarter Blanched Celery
  • Blanched Lettuce Leaves
  • Mayonnaise Dressing

Instructions

  1. Tear the meat of a lobster into shreds with two forks and let it get cold.
  2. Mix with blanched celery cut in small pieces, 3/4 lobster to 1/4 chopped celery.
  3. Mix with mayonnaise dressing.
  4. Make cups of small blanched lettuce leaves, fill with salad, garnish with mayonnaise, capers and lobster coral.
  5. Keep on ice until served.
