Original recipe card for Dried Pea Soup

Ingredients

  • 1 pint Dried Peas
  • 2 quarts Cold Water
  • One Onion
  • 2 teaspoons Butter
  • 2 teaspoons Flour

Instructions

  1. Soak the peas over-night.
  2. Next morning, drain, measure and add cold water and onion.
  3. Simmer slowly till soft.
  4. Rub through a sieve.
  5. Return to fire, season with salt and pepper; thicken with butter and flour.
  6. Boil up again for a few minutes.
