Original recipe card for Lentil Soup

Ingredients

  • 1 pint Lentils
  • 2 ounces Butter
  • 1 medium sized Onion
  • 6 pints Boiling Water
  • To season Salt
  • To season Pepper

Instructions

  1. Soak lentils over-night and in the morning, put over the fire to cook until tender.
  2. Rub through a colander. There should be from five to six tablespoons of the lentil pulp.
  3. Chop up fine the onion, put on in the butter and cook until a light brown; add the lentil pulp.
  4. Mix it well with the butter, add the boiling water, and the salt and pepper.
  5. Let them boil up for a few minutes, stirring vigorously with a wooden spoon, remove to the back of the stove and cook 10 minutes longer.
  6. Serve with croutons.
