Original recipe card for Rice Breakfast Muffins

Ingredients

  • 1 pint Milk
  • 3 gills Wheat Flour
  • Three Eggs
  • 2 cups Boiled Rice
  • 1/2 teaspoon Salt
  • 1 teaspoon Baking Powder

Instructions

  1. Beat the eggs until very light; dilute the rice with some of the milk.
  2. Beat until there are no lumps.
  3. Add the three well beaten eggs and the salt, stir in the flour, into which has been sifted the baking powder.
  4. Now add the remainder of the milk, to make a thick batter.
  5. Bake in muffin pans in a quick oven until lightly browned.
