Original recipe card for Baked Bean Soup

Ingredients

  • 1/2 pint White Beans
  • 3 quarts Boiling Water
  • 1 tablespoon Pearl Tapioca
  • To season Salt
  • 1/4 teaspoon Powdered Thyme

Instructions

  1. Soak the beans over-night.
  2. In the morning, turn off the water and place them in an earthen dish, with the boiling water, cover and let them simmer in a moderate oven five hours.
  3. Take the pearl tapioca, which has been soaked over-night, add to the softened beans, and rub through a colander.
  4. Add salt to taste and sufficient water to make the soup of the proper consistency.
  5. Return to the oven and cook 1/2 hour longer.
  6. Serve.
