Original Recipe Card
Ingredients
- 1/2 pint White Beans
- 3 quarts Boiling Water
- 1 tablespoon Pearl Tapioca
- To season Salt
- 1/4 teaspoon Powdered Thyme
Instructions
- Soak the beans over-night.
- In the morning, turn off the water and place them in an earthen dish, with the boiling water, cover and let them simmer in a moderate oven five hours.
- Take the pearl tapioca, which has been soaked over-night, add to the softened beans, and rub through a colander.
- Add salt to taste and sufficient water to make the soup of the proper consistency.
- Return to the oven and cook 1/2 hour longer.
- Serve.
