Original recipe card for Chicken Consomme

Ingredients

  • 1 pint Oysters
  • 4 cups Seasoned Chicken Stock
  • 1/2 cup Milk or Thin Cream

Instructions

  1. Wash and chop the oysters, reserving the soft portions of 12.
  2. Add 1/2 cupful of cold water, bring gradually to the boiling point and let simmer 25 minutes.
  3. Strain, add the chicken stock to the liquor, season with salt and cayenne pepper and add the milk or cream and the soft parts of the oysters.
  4. Cook until the oysters are plump, and serve piping hot.
