Original Recipe Card
Ingredients
- 2 pounds Meat
- About 1/3 Bone
- 2 pints Cold Water
- 1/8 teaspoon Pepper
- 1/2 teaspoon Salt
- 1/2 teaspoon Sweet Herbs
- Five Peppercorns
- 1 tablespoon Carrot, minced
- 1 tablespoon Onion, minced
- 1 tablespoon Celery, minced
- Two Cloves
Instructions
- Cut the meat in pieces about an inch square.
- Break the bone in small pieces.
- Let this stand for about an hour in cold water, until the water is colored with the meat juices.
- Heat to the boiling point, then skim; let it simmer for 4 hours.
- Do not let it boil.
- Add the seasoning and the vegetables about an hour before the meat is done.
- Strain the liquid from the meat and vegetables and cool quickly.
