Original recipe card for Soup Stock

Ingredients

  • 2 pounds Meat
  • About 1/3 Bone
  • 2 pints Cold Water
  • 1/8 teaspoon Pepper
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Sweet Herbs
  • Five Peppercorns
  • 1 tablespoon Carrot, minced
  • 1 tablespoon Onion, minced
  • 1 tablespoon Celery, minced
  • Two Cloves

Instructions

  1. Cut the meat in pieces about an inch square.
  2. Break the bone in small pieces.
  3. Let this stand for about an hour in cold water, until the water is colored with the meat juices.
  4. Heat to the boiling point, then skim; let it simmer for 4 hours.
  5. Do not let it boil.
  6. Add the seasoning and the vegetables about an hour before the meat is done.
  7. Strain the liquid from the meat and vegetables and cool quickly.
