Original recipe card for Beefsteak Pie

Ingredients

  • 1 1/2 pounds Round Steak
  • One Onion
  • 4 cups Cold Water
  • 1 teaspoon Salt
  • 4 tablespoons Butter
  • 4 tablespoons Flour
  • 1 1/2 cups Potatoes

Instructions

  1. Wipe the steak with a clean rag wrung out of cold water.
  2. Cut the meat in 1-inch cubes.
  3. Put in a kettle and add the chopped onion, pour over the water.
  4. Simmer for 2 hours.
  5. Add the salt.
  6. Melt the butter, add the flour and stir until well blended, then add to the hot stock.
  7. Wash and pare the potatoes and cut in cubes.
  8. Parboil in boiling salted water 8 minutes, drain, add to the meat and cook 3 minutes.
  9. When done, turn into a covered dish, lined with slices of browned toast, and set in the oven for 5 minutes.
