Original recipe card for Cucumber Pickles

Ingredients

  • 2 pounds Cucumbers
  • 1 quart Vinegar
  • 1 ounce to 1 quart vinegar Sugar
  • 1 ounce to 1 quart vinegar Cassia Buds

Instructions

  1. Pare and seed ripe cucumbers.
  2. Slice each cucumber lengthwise into 4 pieces, or cut into fancy shapes, as preferred.
  3. Let them stand 24 hours, covered with cold vinegar.
  4. Drain them; then put into fresh vinegar, with sugar and one ounce of cassia buds to each quart of vinegar.
  5. Boil 20 minutes.
  6. Cover closely in a jar.
