Original recipe card for Cucumber Pickles

Ingredients

  • Cucumber
  • Salt
  • Water
  • Vinegar
  • Sugar
  • Mixed Spices

Instructions

  1. In the evening put the cucumbers in slightly salted water, just salt enough to taste; leave until morning.
  2. Now drain them, wash thoroughly in clear, cold water, put into a preserving kettle and cover with vinegar, place on the stove and let them get hot enough to steam.
  3. Pack the cucumbers in glass jars, one or two-quart size, as preferred.
  4. Put fresh vinegar in another kettle, add spices and a little sugar, let it reach the boiling point, pour over the pickles and seal while hot.
