Original recipe card for Sweet Pickles

Ingredients

  • 1/4 peck Cucumbers
  • 1/4 peck Green Onions
  • 1/4 peck Green Tomatoes
  • 1 quart Water
  • 1 cup Salt
  • 1 pint Vinegar
  • 1/2 pound Brown Sugar
  • 1 teaspoon Mustard
  • 1 teaspoon Cinnamon
  • 1 teaspoon Allspice
  • 1 teaspoon Cloves
  • 1 teaspoon Pepper

Instructions

  1. Slice the green tomatoes on a slaw cutter, pour over them the water, in which the salt has been dissolved, let stand 2 days, then drain in a sack until quite dry.
  2. Add to the vinegar, the sugar and spices.
  3. When the vinegar reaches the boiling point, add the tomatoes and onions and cook 10 minutes, then simmer until the tomatoes can be pierced with a straw.
  4. Put in a jar and cover closely.
  5. When cold, it is ready for use.
  6. Be sure and chop the onions fine.
