Original Recipe Card
Ingredients
- 1/4 peck Cucumbers
- 1/4 peck Green Onions
- 1/4 peck Green Tomatoes
- 1 quart Water
- 1 cup Salt
- 1 pint Vinegar
- 1/2 pound Brown Sugar
- 1 teaspoon Mustard
- 1 teaspoon Cinnamon
- 1 teaspoon Allspice
- 1 teaspoon Cloves
- 1 teaspoon Pepper
Instructions
- Slice the green tomatoes on a slaw cutter, pour over them the water, in which the salt has been dissolved, let stand 2 days, then drain in a sack until quite dry.
- Add to the vinegar, the sugar and spices.
- When the vinegar reaches the boiling point, add the tomatoes and onions and cook 10 minutes, then simmer until the tomatoes can be pierced with a straw.
- Put in a jar and cover closely.
- When cold, it is ready for use.
- Be sure and chop the onions fine.
