Original recipe card for Broiled Beefsteak, Hollandaise

Ingredients

  • Beefsteak
  • Sauce
  • To garnish Parsley
  • 1/2 cup Butter
  • 1 tablespoon Lemon Juice
  • 2 (yolks) Eggs
  • 1/4 teaspoon Salt
  • 2 tablespoons Tomato Puree
  • 1 teaspoon Chopped Parsley

Instructions

  1. Wipe off the steak and broil from 12 to 15 minutes.
  2. Remove to a hot platter, pour over the sauce and garnish with parsley.
  3. Mix the butter, lemon juice and the eggs.
  4. Set the saucepan into a larger pan containing boiling water, set on the fire and stir constantly, using a wire whisk.
  5. When the butter is melted, remove from the fire and add the seasoning, the tomato puree and the parsley.
  6. This sauce needs great care in the cooking, for if left over the fire too long, it will separate.
