Ingredients
- Beefsteak
- Sauce
- To garnish Parsley
- 1/2 cup Butter
- 1 tablespoon Lemon Juice
- 2 (yolks) Eggs
- 1/4 teaspoon Salt
- 2 tablespoons Tomato Puree
- 1 teaspoon Chopped Parsley
Instructions
- Wipe off the steak and broil from 12 to 15 minutes.
- Remove to a hot platter, pour over the sauce and garnish with parsley.
- Mix the butter, lemon juice and the eggs.
- Set the saucepan into a larger pan containing boiling water, set on the fire and stir constantly, using a wire whisk.
- When the butter is melted, remove from the fire and add the seasoning, the tomato puree and the parsley.
- This sauce needs great care in the cooking, for if left over the fire too long, it will separate.
