Original recipe card for Veal Stew

Ingredients

  • 3 pounds Veal (Lean)
  • 1/2 pound Salt Pork
  • Two Eggs
  • 3 cupfuls Buttermilk
  • 1 teaspoon Soda
  • To mix Flour

Instructions

  1. Cut the meat in pieces, put them in a pot with some small pieces of salt pork and plenty of pepper and salt, pour over them enough hot water to cover; let it boil until thoroughly done.
  2. Then, while the water is still boiling, drop in by the spoonful a batter made from the following ingredients: The eggs, well beaten, buttermilk, flour and soda enough to make a thick batter.
  3. Cover the pot and as soon as the batter is well cooked, serve it, as by standing it becomes heavy.
