Original recipe card for Beef Stew

Ingredients

  • 2 pounds Beef
  • 1 pint Cold Water
  • 2 tablespoons Flour
  • 1 pint Boiling Water
  • 1 cup Diced Carrot
  • 1 pint Diced Potatoes
  • To season Salt
  • To season Pepper

Instructions

  1. Cut the beef in small pieces.
  2. Melt some of the fat in a pan, brown in it 1/2 the meat.
  3. Put the rest of the meat in a kettle with the pint of cold water, let stand 20 minutes, then heat slowly.
  4. Transfer browned meat to kettle; thicken fat with the flour, add the boiling water and stir; when thick strain into kettle.
  5. Add carrots, cover and simmer.
  6. When half done, add potatoes.
  7. Season well.
