Original recipe card for Wild Duck With Peas

Ingredients

  • Cold Duck
  • Ham
  • 2 Tablespoonfuls Butter
  • Salt and Pepper
  • 1 Pint Stock
  • 1 Tablespoonful Flour
  • 1 Pint Peas

Instructions

  1. Put the remains of a cold duck and one slice of ham in a saucepan with the butter.
  2. Fry until they are slightly browned.
  3. Then dredge in the flour and pour the stock in gradually.
  4. When it boils up, season with one teaspoonful of salt and one-fourth of a teaspoonful of pepper.
  5. Have the peas ready, put them in the center of the dish, arrange the duck around them and pour the sauce over it.
