Original recipe card for Jambolaya

Ingredients

  • 1 Fat Chicken
  • 1 Cupful Rice
  • 1/4 Lb. Ham
  • 1 Qt. Boiling Water
  • 1 Teaspoonful Salt
  • 1 Saltspoonful Pepper

Instructions

  1. Place in a saucepan the chicken, which has been cut in pieces as for fricassee.
  2. Pour over it the boiling water and cook slowly for forty minutes.
  3. Then put in the well-washed rice, and add the chopped ham, salt and pepper.
  4. Cover, and cook slowly until the rice is thoroughly cooked.
  5. Place on a platter and serve at once.
