Original recipe card for Chow Chow

Ingredients

  • One pint Large cucumbers
  • One pint Small cucumbers
  • One quart Onions
  • Two heads Cauliflower
  • Three Green peppers
  • One pint Green Tomatoes
  • Two quarts Vinegar
  • 1/2 pound Mustard
  • One cup Sugar
  • One cup Flour
  • 1/2 ounce Tumeric

Instructions

  1. Cut the vegetables in small pieces, remove the seeds from the peppers, place in weak brine for twenty-four hours.
  2. Cook in the same brine until they are tender.
  3. Skim out and pour over the boiling hot dressing.
  4. Cook the ingredients in a double boiler, stirring constantly until it is free from lumps, when it should pour easily.
  5. Pour over the vegetables and seal in air tight jars.
