Original recipe card for Currant Jelly

Ingredients

  • 1 pint Currant Juice
  • 1 pint Granulated Sugar

Instructions

  1. Place the cleaned currants in a kettle, crush with a wooden masher.
  2. Heat slowly. Stir often.
  3. Place a sieve or strainer over a large bowl and over this place a double fold of cheese cloth.
  4. Let the mass drain, do not squeeze it through.
  5. Measure the juice and place in a kettle, add equal quantities of juice and sugar.
  6. Stir until the sugar is dissolved and place over the flame.
  7. When it boils, skim, place over the fire and boil and skim again.
  8. Do this three times.
  9. Now pour into the hot glasses which have been in a pan of hot water on the back of the stove.
  10. Place where the sun will reach them.
  11. Cut round pieces of white paper to fit the top of the glasses.
  12. When the jelly is hard, brush over with alcohol, put on the covers and put away.
