Ingredients
- 1 pint Currant Juice
- 1 pint Granulated Sugar
Instructions
- Place the cleaned currants in a kettle, crush with a wooden masher.
- Heat slowly. Stir often.
- Place a sieve or strainer over a large bowl and over this place a double fold of cheese cloth.
- Let the mass drain, do not squeeze it through.
- Measure the juice and place in a kettle, add equal quantities of juice and sugar.
- Stir until the sugar is dissolved and place over the flame.
- When it boils, skim, place over the fire and boil and skim again.
- Do this three times.
- Now pour into the hot glasses which have been in a pan of hot water on the back of the stove.
- Place where the sun will reach them.
- Cut round pieces of white paper to fit the top of the glasses.
- When the jelly is hard, brush over with alcohol, put on the covers and put away.
