Original recipe card for Breaded Veal Cutlets

Ingredients

  • 1 pound Veal Cutlets
  • To season Pepper
  • To season Salt
  • One Beaten Egg
  • Cracker Dust
  • Of one lemon Lemon Juice

Instructions

  1. Trim and flatten the cutlets, pepper and salt and roll in beaten egg, then in cracker-dust.
  2. Fry rather slowly in good dripping, turning when the lower side is brown.
  3. Drain off the fat, squeeze a little lemon juice upon each, and serve in a hot, flat dish.
