Original recipe card for Pork Chop with Tomato Gravy

Ingredients

  • Powdered Sage
  • Onion
  • Butter
  • Pork Chops
  • Flour
  • Pepper
  • Salt
  • Sugar
  • 1/2 cup Tomato Juice

Instructions

  1. Trim the chops of skin and fat; rub them over with a mixture of the powdered sage and onion.
  2. Put a small piece of butter into a frying pan; put in the chops and cook slowly, as they should be well done.
  3. Lay chops on a hot dish; add a little hot water to gravy in pan, also 1 large spoonful of butter, rolled in flour, also seasoning and the juice drained from a can of tomatoes.
  4. Stew 5 minutes, pour over the chops, and serve.

Notes

The tomatoes themselves can be used for a tomato omelet.
