Ingredients

  • Butter
  • Salt and Pepper
  • Chicken

Instructions

  1. Singe, split down backbone and clean.
  2. Grease broiler, arrange chicken on it, crossing legs and turning wings.
  3. Rub inside and out with soft butter and season.
  4. Have the fire clear and hot.
  5. Cook the flesh side first, holding up well that it may not brown too quickly.
  6. It should cook about 20 or 25 minutes, then turn and brown skin side.
