Ingredients

  • Rabbit
  • To season Salt and Pepper
  • 3 thin slices Bacon
  • Boiling Water
  • Butter

Instructions

  1. After the rabbit is skinned, dressed and hung over-night, put it in a baking pan, sprinkle with pepper and salt and put a piece of bacon on the top.
  2. Pour some boiling water into the bottom of the pan, and cover with another pan of equal size, let the rabbit steam about 15 or 20 minutes, then take off the cover, baste with a little butter and let them brown.

Notes

Rabbits are much improved by larding.
