Original recipe card for New Orleans Corn Rolls

Ingredients

  • 1 1/4 cups White Flour
  • 3/4 cup Corn Meal
  • 4 teaspoons Baking Powder
  • 1/2 teaspoon Salt
  • 1 tablespoon Sugar
  • 2 tablespoons Butter
  • One Egg
  • 1/2 cup Sweet Milk

Instructions

  1. Mix and sift the dry ingredients in a bowl.
  2. Chop the butter with a knife, beat the egg, add milk and stir all into the flour, making a soft dough that can be readily handled.
  3. Turn out on a floured board, toss lightly and roll out 1/2 an inch thick.
  4. Cut with a cutter, place a piece of butter in the center of each, fold over so that the opposite edges meet, brush the top with milk and bake in a quick oven on buttered tins, from 10 to 15 minutes.

Notes

Some flour is more dry than others, and will require more milk.
