Original recipe card for Boiled Fish

Ingredients

  • 2 lbs. Fish
  • 1/2 cup Vinegar
  • 1 teaspoon Salt
  • One Onion
  • 1 dozen (whole) Black Peppers
  • 1 blade Mace
  • 1 cup Drawn Butter
  • Juice of 1/2 a Lemon

Instructions

  1. Put sufficient water in the pot to easily cover the fish.
  2. Add vinegar, salt, onion, peppers and mace.
  3. Sew up the fish in a piece of clean muslin, fitted to shape.
  4. Heat slowly for the first 1/2 hour, then boil 8 minutes at least, to each pound of fish.
  5. Boil rapidly.
  6. Unwrap and pour a sauce over the fish, based upon the liquid in which the fish has been boiled, with the juice of a lemon stirred in.
