Ingredients
- 2 lbs. Fish
- 1/2 cup Vinegar
- 1 teaspoon Salt
- One Onion
- 1 dozen (whole) Black Peppers
- 1 blade Mace
- 1 cup Drawn Butter
- Juice of 1/2 a Lemon
Instructions
- Put sufficient water in the pot to easily cover the fish.
- Add vinegar, salt, onion, peppers and mace.
- Sew up the fish in a piece of clean muslin, fitted to shape.
- Heat slowly for the first 1/2 hour, then boil 8 minutes at least, to each pound of fish.
- Boil rapidly.
- Unwrap and pour a sauce over the fish, based upon the liquid in which the fish has been boiled, with the juice of a lemon stirred in.
