Original recipe card for Boned Codfish Cakes

Ingredients

  • Four Potatoes
  • 1 cup Shredded Codfish
  • To cover Boiling Water
  • 1 tablespoon Butter
  • 1/4 teaspoon Pepper
  • Two (yolks) Eggs
  • To dredge Flour
  • To fry Fat

Instructions

  1. Pare the potatoes and cut them in dice.
  2. Place in a stewpan with the codfish, cover with the boiling water and set where it will gently boil until the potatoes are tender.
  3. Drain off all the water and return to the fire to steam for a few seconds.
  4. With a fork whip the fish and potatoes together until smooth, season with the butter, pepper and add the eggs.
  5. Form into cakes 1/2 an inch thick, dredge with flour and fry in hot fat until both sides are a rich brown.
