Ingredients

  • Fish
  • Dressing

Instructions

  1. Clean and wipe the fish thoroughly with a cloth that has been wrung out of cold water.
  2. Place dressing in the cavity and sew up the opening.
  3. Rub fish with salt and pepper. Butter both sides.
  4. Cut gashes across the side two inches apart, and in these put tiny strips of fat salt pork.
  5. Dredge with flour, place on a cheese cloth in a baking pan.
  6. Bake 15 minutes for each pound of fish, baste frequently with liquid from the pan, putting in a little water for that purpose.
  7. When browned, serve with slices of lemon and parsley for a garnish.
