Ingredients

  • To season Beaten Egg
  • To fry Oysters
  • To season Cracker Crumbs
  • To season Pepper
  • To fry Lard and Butter

Instructions

  1. Select the largest and finest oysters.
  2. Drain and wipe them by spreading upon cloth, laying another over them, pressing lightly.
  3. Roll each in beaten egg, then in cracker crumbs with which has been mixed a very little pepper.
  4. Fry in mixture of equal parts lard and butter.
