Original recipe card for Fried Fish

Ingredients

  • Fish
  • To sprinkle Flour
  • To season Salt
  • To fry Butter or Lard
  • To garnish Parsley

Instructions

  1. Clean, wipe dry, inside and out.
  2. Sprinkle with flour, and season with salt.
  3. Fry in hot butter or lard; 1/2 butter and 1/2 lard make a good mixture for frying fish.
  4. The moment fish are done to a good brown, take them from fat and drain in hot strainer.
  5. Garnish with parsley.
