Original recipe card for Rice Sandwiches

Ingredients

  • 1/2 Cupful Rice
  • 1 Blade of Mace
  • 1 Thin Strip of Lemon Peel
  • 1 Tablespoonful Chopped Cooked Meat
  • 1 Tablespoonful Chopped Cooked Ham
  • 1 Teaspoonful Melted Butter
  • to Taste Salt, Pepper and Paprika
  • as needed Brown Bread
  • 1 Sprig of Parsley
  • 1 1/2 Pints Boiling Water

Instructions

  1. Boil the rice in the boiling water with the parsley, mace and lemon peel.
  2. When quite tender strain off the water, take out the parsley, mace and lemon peel.
  3. Stir into the rice the chopped meat and chopped ham; rub all through a fine sieve and add the seasonings and the melted butter.
  4. Cut an even number of slices of brown bread, spread the mixture, when cold, on half of them and cover with the remaining slices.
  5. Trim and cut into fancy shapes.
  6. Decorate with halved olives.
  7. Serve on a fancy plate with a mound of plain boiled rice in the center.
