Original recipe card for Dutchess Cream

Ingredients

  • 6 tablespoons large pearl tapioca
  • pinch salt
  • 1 cupful sugar
  • juice of 1 large lemon juice
  • juice large can of pineapple
  • 1 cupful diced pineapple
  • 1 cupful white grapes seeded and peeled
  • 1 cupful nut meats
  • 1 pint whipped cream

Instructions

  1. Soak 6 tablespoons large pearl tapioca overnight.
  2. Cook with pinch of salt in double boiler until clear.
  3. When cold, add 1 cupful sugar, juice of 1 large lemon and the juice of 1 large can of pineapple.
  4. Cook until thick (drops off spoon).
  5. Set aside to cool, then add diced pineapple, 1 cupful white grapes seeded and peeled, 1 cupful nut meats.
  6. When ready to serve, fold through 1 pint of whipped cream.
