Original recipe card for Strawberry Ice Cream

Ingredients

  • 3 pints Cream
  • 12 ounces Pulverized Sugar
  • Two Eggs
  • 1 quart Strawberries
  • 2 tablespoons Vanilla
  • 6 ounces Pulverized Sugar

Instructions

  1. Mix the cream, the pulverized sugar and the eggs.
  2. Place them in a porcelain lined basin; set over the fire, stir constantly to the boiling point.
  3. Remove and strain through a hair sieve.
  4. Place in a freezer and freeze.
  5. Take the ripe strawberries, hull them and put them into a china bowl.
  6. Add 6 ounces more of the pulverized sugar and crush all down to a pulp.
  7. Add this pulp to the frozen cream, add the vanilla and mix in well.
  8. Now give the freezer a few additional turns to harden the cream.
