Original recipe card for Italian Mousse

Ingredients

  • 2 squares Chocolate
  • 1/2 cup Powdered Sugar
  • 3/4 tablespoon Powdered Gelatine
  • 3 tablespoons Boiling Water
  • 1 cup Cream
  • 3/4 cup Sugar
  • 1 quart Whipping Cream
  • 1 teaspoon Vanilla

Instructions

  1. Melt the chocolate, add the powdered sugar and add 1 cup of cream, gradually.
  2. Stir over the fire until it boils.
  3. Then add the gelatine dissolved in water, sugar and vanilla.
  4. Strain into bowl, set in ice water and stir until it thickens.
  5. Then fold in the remaining cream, whipped.
  6. Mold, and let it stand in the freezer in one part salt to two parts ice, for four hours.
