Original recipe card for Floating Island

Ingredients

  • 1 quart Milk
  • Four Eggs
  • 4 tablespoons Sugar
  • 2 teaspoons Extract Vanilla
  • 1/2 cup Currant Jelly

Instructions

  1. Heat the milk to scalding, but not boiling.
  2. Beat the yolks, stir into them the sugar, and pour on them gradually, mixing well, a cup of hot milk.
  3. Put into a saucepan and boil until it begins to thicken.
  4. When cool, flavor and pour into a glass dish.
  5. Heap upon top, meringue of whites whipped until you can cut it, into which you have beaten the jelly, a teaspoon at a time; or drop whipped whites by the tablespoon on top of custard and put small piece of jelly in the center of each 'island.'
