Original recipe card for Caramel Custard

Ingredients

  • 4 cups Scalded Milk
  • Five Eggs
  • 1/2 cup Sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla

Instructions

  1. Carmelize the sugar in an omelet pan until it smokes but does not burn.
  2. Mix the milk and eggs and beat well together, add the salt, sugar and the extract.
  3. Place in custard cups and bake in a moderate oven.
