Original recipe card for Blanc Mange

Ingredients

  • 3 ounces Corn-starch
  • 1 quart Milk
  • 4 ounces Sugar
  • A pinch Salt
  • 1 teaspoon Vanilla Extract
  • One Egg

Instructions

  1. Dissolve the corn-starch in some of the milk.
  2. Put into the remainder of the milk the sugar and the salt and heat to near boiling.
  3. Then add the mixed corn-starch, and boil, stirring briskly 4 minutes.
  4. Remove from the fire and beat in the egg and vanilla.
  5. Pour into moulds or cups to harden.
