Original Recipe Card
Ingredients
- 2 Eggs
- 1 Cupful Sugar
- 1 Cupful Flour
- 2 Teaspoonfuls Baking Powder
- 6 Tablespoonfuls Boiling Water
- 1 Teaspoonful Vanilla Extract
- 1 Pound Confectioner's Sugar
- 1 Pound Chopped Cocoanut
- 1 Lemon
Instructions
- Have the yolks of the eggs beaten up with the sugar, then add the flour, baking powder and the whites of the eggs well beaten.
- Stir in the boiling water and the vanilla.
- Bake in a moderate oven in a buttered pan.
- While slightly warm cut into two-inch cubes.
- Make a frosting with the confectioner's sugar and the juice of half the lemon, adding enough water to make it moderately stiff.
- Frost the cubes on all sides and roll in the cocoanut.
- Chopped nuts may be used.
- Let stand until frosting is hardened.
