Ingredients

  • 2 Eggs
  • 1 Cupful Sugar
  • 1 Cupful Flour
  • 2 Teaspoonfuls Baking Powder
  • 6 Tablespoonfuls Boiling Water
  • 1 Teaspoonful Vanilla Extract
  • 1 Pound Confectioner's Sugar
  • 1 Pound Chopped Cocoanut
  • 1 Lemon

Instructions

  1. Have the yolks of the eggs beaten up with the sugar, then add the flour, baking powder and the whites of the eggs well beaten.
  2. Stir in the boiling water and the vanilla.
  3. Bake in a moderate oven in a buttered pan.
  4. While slightly warm cut into two-inch cubes.
  5. Make a frosting with the confectioner's sugar and the juice of half the lemon, adding enough water to make it moderately stiff.
  6. Frost the cubes on all sides and roll in the cocoanut.
  7. Chopped nuts may be used.
  8. Let stand until frosting is hardened.
