Original recipe card for Pineapple Muffins or Tea Cakes

Ingredients

  • 1/4 c. Shortening
  • 1/4 c. White sugar
  • 1/4 c. Brown sugar
  • 1 Egg
  • 2 c. Flour (sifted before measuring)
  • 1/4 tsp. Salt
  • 4 tsp. Baking powder
  • 1 c. Milk
  • 1/2 c. Crushed pineapple (well drained)

Instructions

  1. Cream shortening, add sugars slowly.
  2. Blend in well beaten egg.
  3. Add flour with the baking powder mixed in it.
  4. Add milk alternately with the flour mixture.
  5. Add pineapple.
  6. Pour into greased and floured muffin pans.
  7. Fill each cup almost 2/3 full.
  8. Bake about 25 minutes in oven 400°.

Notes

Prunes or other fruit may be used instead of the pineapple.
