Original recipe card for Cocoanut Layer Cake

Ingredients

  • 1 cup Sugar
  • 1/2 cup Butter
  • 1 cup Milk
  • 3 teaspoons Baking Powder
  • 3 scant cups Flour
  • 1 teaspoon Lemon Extract
  • 1 cup Sugar (Cocoanut Filling)
  • 1 cup Sweet Cream
  • 1/2 cup Chopped Cocoanut
  • 1 scant teaspoon Butter (Cocoanut Filling)
  • 1 teaspoon Corn Starch

Instructions

  1. Cream the sugar and butter, add the milk and baking powder, sifted with the flour.
  2. Beat together and add the extract.
  3. Bake in layer cake tins in a quick oven.
  4. For the filling, boil together the sugar and cream until it spins a thread, add the cocoanut and butter, lastly the cornstarch which has been wet with a little milk.
  5. Boil up 2 minutes and spread between cake layers, while warm.
